Also lactose free, the cheeses I used were both aged — cheddar and locatelli. The rue was made from Earth Balance, Olive Oil, almond milk and gluten free flour.
Hearty cheesy potato casserole.
Not a particularly exciting dinner…BUT… look at that purple sticky rice! So rich and beautiful. Also its a kind of brown rice, so its a whole grain.

Salad: Brown rice, sliced steak, roasted squash seeds, oil and balsamic vinegar, salt and pepper
Stuffed Acorn Squash: brown rice, veggies, diced sausage, parmesan

November: Hearty, hot lentil “stew” with brown rice, carrots, onions, kale, mushrooms

Also I have been baking a lot with almond meal, SO incredible and chewy and delicious. Not enough on its own but mixed with gfree oats and/or Bob’s Red Mills gfree All Purpose baking flour… you’re in there.
